A team of students including Ms. Prinyarath Chalee, Ms. Punthira Chotiyavechawat, and Ms. Natakamol Tubtimthumfrom from the Department of Health Product Innovation, Faculty of Integrative Medicine, Rajamangala University of Technology Thanyaburi (RMUTT) along with their advisors, Dr. Suriya Chaiwong and Assistant Dr. Surachai Techaoei conducted a research study to develop prebiotic product from jackfruit seeds starch with the aim of increasing good microbes inside the intestine and improving digestive system. Ms. Prinyarath Chalee as representative of the team explained, “Regarding constipation which is widely considered to be an issue among various ages, stomach pain, or heartburn, or nausea, some other common signals (including pimple and skin breakouts) and severe diseases like hemorrhoids and cancer are found. In order to prevent the issue, changes of behavior such as increasing fiber intake, timely defecation, drinking enough water, and good exercise are all required. Interestingly, another common option of reducing constipation condition is prebiotics intake. Prebiotics are foods (typically high-fiber foods) that act as food for probiotics or human microbes. Prebiotics, therefore, plays a positive role in promoting human nutrition and digestive system which also tends to relieve defecation problem. Based on research findings, it was found that intake of jackfruit seed extract had increased the growth rates of two types of probiotics including Lactobacillus casei and Bijfdobacterium longum which was similar to products available in the market such as inulin, fructosan and wheat flour. Thus, we intended to conduct a research study to develop prebiotic product from agricultural left-over of jackfruit seeds into jelly strip prebiotics product making it easy for everyone to use on the go. This prebiotic product will not only help increase microbes improve your digestive system but it will also help add values to jackfruits.”
Ms. Punthira Chotiyavechawat further added, “Regarding the efficacy test of prebiotics in dried and fresh jackfruit seed extract, it was found that starch extracted from fresh seeds of jackfruits obtained rough and yellowish color while the dried one turned out to be white with the % yield of 1.66 and 139 respectively. Reducing sugar tests on fresh and dried jackfruit extracts revealed that there was 180 me/g in fresh extract while the dried obtained 104.18 mg/g.
Interestingly, under the concentration of 1 % and 4% of both types of extracts, the growth of Lactobacilus plantarum was higher in 1% concentration when compared to the 4%. Concerning the shelf-life of the product, no change of PH level of jelly strip was found when put in different conditions.
